Sebastien Bonneu
I met Sebastian Bonneu at a farmer’s market in Austin, Texas. He runs his seven-acre Countryside Farm in Cedar Creek, raising ducks, chickens, geese, rabbits, guinea fowl, pigeons and heritage pigs for meat and eggs. After asking some questions and explaining my project, Sebastian invited me to his farm, and the following day Henry and I drove out to learn more about the day-to-day realities of raising animals for food, and to explore some of his beliefs around the ethics of using animals.
“Some animals can figure it out. I mean, there’s plenty of them. Elephants understand it, horses understand it. Pigs, yeah, pigs understand it it. When there’s a dead pig, they’ll look at him and they know.
They’re kind of like, whoa, that’s my buddy.”
